TUSCAN PASTA:
*steph... this recipe can be vegan just omit the chicken and you'll still have a wonderful meal* kisses!

so here's what you'll need

2 cans (14.5 oz) italian stewed tomatoes undrained
1 lb. boneless skinless chicken breast
        cut into 1 inch strips
1 can (15.5 oz) kidney beans, rinsed and drained
1 can (15 oz) tomato sauce
1 cup water
1 medium (green) bell pepper chopped *color*
1 jar (4.5 oz) sliced mushrooms, drained
1/2 cup chopped onion (any color, i use red though)
1/2 cup chopped celery (celery is my fave)
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
6oz uncooked (thin) spaghetti, broken into halves
*10 fresh basil leaves for garnish

Step 1: put all ingredients *except the spaghetti* into a slow cooker, cover and cook on LOW for 4 hours until veggies are tender.

Step 2: turn slow cooker to HIGH, stir in spaghetti: cover and stir again after 10 minutes. Cover after you stir and cook for 45 more minutes or until the pasta is tender. garnish with fresh basil and or freshly grated parmesan.

Step 3: serve with a green salad, and fresh ciabatta...
enjoy!
